The process

Start with fresh curd

Use fresh, well-set dahi, properly fermented beforehand, either made in-house or sourced.

Load the machine

Break up the set curd and load it into the machine along with water, and sugar, salt or spices like roasted cumin, mint or ginger depending on your recipe.

Switch on and churn

The machine churns and blends at speed, like a traditional wooden mathani but faster and far more consistent.

Let it fully break up and aerate

Churning breaks up the curd fully and works air into it, giving lassi its smooth, frothy texture.

Adjust to taste

Adjust water, sugar or spice to reach the consistency and taste you want, and churn briefly again if needed.

Serve or bottle

Serve fresh straight from the machine at the counter, or bottle and pack immediately for retail sale, keeping it refrigerated.
