The short version: measure your ingredients accurately, let the machine knead for a fraction of the time hand-kneading takes, check the consistency partway through, then use the dough while it is fresh.

The process

Six steps from flour to finished dough.

Measure your ingredients

Flour and water to start, plus salt, oil or other ingredients depending on your recipe. Accurate measuring matters more with a machine than by hand, since you cannot feel your way to the right consistency as easily.

Load the bowl

Add your measured ingredients into the machine's mixing bowl.

Switch on and knead

The paddle, hook or ribbon blades knead the mixture. This typically takes 4 to 10 minutes depending on quantity and dough type, against 15 to 30 minutes by hand.

Check consistency partway through

Open the machine briefly and check the dough. Add a little water or flour if needed and continue kneading.

Remove once smooth

Once the dough is evenly mixed and smooth, switch off and remove it.

Use, rest or shape

Portion the dough for immediate use, roll it out for roti or papad, or let it rest and proof as your recipe requires before the next step.

  • What dough are you making, and how stiff or soft does it need to be?
  • How many kilograms per batch, and how many batches a day?
  • Does the bowl and blade material need to meet any hygiene or licensing requirement?
  • How much bench or floor space do you have, and what power supply?
  • Who will clean it, and how easy is that with your chosen model?
