Prepare the dough
Mix flour, water and sometimes egg or salt, kneaded separately or by an integrated dough-and-noodle machine.
Buyer guide · Automatic noodle machine
Rolling and cutting noodles by hand does not scale once orders pick up. Here is what a noodle machine actually does, in plain language.
The short version: prepare your dough, feed it into the machine, let it press and cut into strands, dust and use fresh or dry it, then pack for same-day sale or longer shelf life.
The process
Mix flour, water and sometimes egg or salt, kneaded separately or by an integrated dough-and-noodle machine.
Load the dough into the noodle machine's hopper and rollers.
The machine presses dough through rollers, then through cutting dies or molds, forming noodle strands of the thickness and shape you choose.
Fresh noodles emerge continuously from the outlet, cut to length automatically or manually.
Lightly dust fresh noodles with flour to stop them sticking together. Use them fresh the same day for hakka noodles, or dry them, often using a tray dryer, to make vermicelli.
Pack fresh noodles in bulk or pouches for same-day sale, or pack dried vermicelli into sealed pouches for a longer shelf life.
Choosing the right machine
A cloud kitchen making fresh hakka noodles daily and a vermicelli producer drying for shelf life need very different setups.
