Prepare the raw product
Roll out your papad, slice your vegetables, or prepare whatever you are drying, and lay it out in a single, even layer. Overlapping pieces dry unevenly.
Buyer guide · Tray dryer
Sun-drying stops the moment the sky clouds over. Here is what a tray dryer actually does, in plain language, and why it removes the weather from your production.
The short version: prepare and lay out your product evenly, load the trays, run the dryer for a set number of hours with steady hot air, check for the right crispness, then cool and pack.
The process
Roll out your papad, slice your vegetables, or prepare whatever you are drying, and lay it out in a single, even layer. Overlapping pieces dry unevenly.
Place your trays onto the trolley or rack that slides into the drying chamber, leaving enough gap between trays for air to move.
Fans circulate hot air evenly through the chamber. Unlike sun-drying, this keeps working through monsoon, winter fog or a cloudy week.
Drying takes several hours depending on the product and moisture content. Check periodically rather than leaving it unattended for the full cycle.
You want the target crispness or moisture level without over-drying, which makes papad brittle and prone to cracking.
Remove the trays, let the product cool fully, then pack into pouches, often using a pouch packing machine, or into containers.
