The short version: clean your seed, feed it into the expeller, let it press out raw oil while separating the solid cake, then settle or filter the oil before bottling.
The process
Choose good quality mustard seed and clean it thoroughly, removing dust, stones and any foreign material before it goes anywhere near the press.
Some operators soak briefly and sun-dry the seed to reach the right moisture level for pressing. This step affects how cleanly the oil separates.
Seeds go into the hopper, where a screw mechanism carries them steadily into the press chamber.
Mechanical pressure squeezes oil out of the seed while pushing the solid residue, the oil cake or khal, out separately.
Collect the raw oil and let it settle, or filter it, to remove sediment before it is ready for sale or use.
Bottle or pack the finished oil. Do not overlook the oil cake: it sells separately as animal feed or fertiliser and is a real extra revenue stream, not a waste product.
