The short version: sort and wash your potatoes, load them into the peeler drum, rinse off the loosened skin, then hold the peeled potatoes in water until you are ready to slice.

The process

Six steps from raw potato to peeled and ready.

Sort your potatoes

Choose firm, disease-free potatoes of similar size. Large oval shapes work best for chips since they reduce waste when sliced.

Wash thoroughly

Wash the potatoes well to remove soil before they go anywhere near the peeler.

Load the drum

The machine uses an abrasive rotating surface plus a water spray to rub the skins off as the potatoes tumble inside the drum.

Rinse under running water

Rinse the peeled potatoes to wash away any loose skin left behind.

Hold in water

Place peeled potatoes in water to prevent browning until you are ready for the next step.

Move on to slicing

From here, potatoes typically go to a slicing machine for thin, uniform slices, then blanching, frying or drying, flavouring and packing. The peeler is the first stage of a larger chips or wafers line.
